Roasted Dry Fruit Ingredients : Cashews-1 cup, Almonds-1 cup, Pistachios-1 cup, Kashmiri Red Chilli-half teaspoon, Roasted Cumin Powder-half teaspoon, Chaat Masala-half teaspoon, Sanchal Powder-1 teaspoon, Amchoor Powder-1 teaspoon , salt-as per taste-ghee-4 tbsp Method : First of all put the ghee hot. In it, cashews, almonds and pistachios are to be fried simultaneously. It should be roasted in such a way that the color changes slightly and the aroma comes out. While roasting, the heat should be kept low so that the ghee does not burn and the dry fruits get crunchy. Mix cumin powder, sanchal powder, chaat masala, red chilli powder, amchoor powder and salt in it. Pack the delicious roasted dry fruits in an airtight container. It will also come in handy to feed guests on New Year. Outside, such spicy dry fruits are very expensive. Jamnagar dry kachori Ingredients : Fenugreek-1 cup, baking powder- pinch, fennel-1 tsp, cumin-1 tsp, whole coriander-1 tsp, sesame seeds-3 tsp, garam masala-1 tsp, sugar-2 tsp, fried mung dal -1 cup, finely chopped cumin-half cup, salt-as per taste, oil-as required, red chilli powder-2 tsp, turmeric-half tsp, hing-pa tsp, cashew pieces-2 tsp, raisins-2 tsp, tamarind pulp -2 spoons, ghee-2 spoons Method: Mix ghee, pinch of baking powder and salt in menda and pour water as needed and make a dough. Roast whole coriander, cumin seeds, sesame seeds and fennel seeds in a pan on low heat. Crush this roasted spice and sugar in a mixer and take it out in a bowl. In the same way, crush the mung beans and nuts in a mixer and take them out in a bowl. Now mix garam masala, salt, red chillies, fennel seeds, sesame seeds, asafoetida, turmeric, cashew pieces, raisins and tamarind pulp and stir well. Roll small balls of the mixture. Mix a spoonful of water if required. Fill the flour with masala powder and pack it. Take extra flour. Once the oil gets hot, reduce the gas and fry the pink on low heat. Jamnagar's fun dry kachori is ready. Green Chevado Ingredients: Gram dal-2 cups, Potatoes-3 pcs, Brown sugar-3 tsp, Salt-as per taste, Turmeric-1 tsp, Chopped green chillies-2 pcs, Lemon flower-half tsp, Sugar-1½ tsp, Sesame seeds -3 spoons, oil-3 spoons (for dressing), cashews-4 spoons, raisins-4 spoons, oil-for frying Method: Soak gram dal in water for four to five hours. After that drain the water from the dal and keep it in a cotton cloth for two to three hours. Remove the skin of the potato and grind it into a thick and big grater, wash it once with water and pat it in a cotton cloth for a few times. When the oil heats up in a pan, fry the chickpeas to the extent of 50 to 60 percent. Then fry the grated potato in it until it turns slightly golden. Now mix gram flour and gram dal and mix brown sugar and lemon blossom. Take some oil in a wok and add green chillies, sweet neem, turmeric and sesame seeds and saute them for a minute. Mix everything well. Add cashews, raisins and sugar to it. The green chevdo is ready. Healthy Oats Chevdo Ingredients: Oats-1 cup, Nylon Pouna-1 cup, Cornflakes-half cup, Oil-2 tbsp, Ghee-1 tbsp, Rye-sp, Cumin-sp, Groundnut-sp, Sweet Neem Leaves- 8 to 10, Chopped green chillies-2 nos., Lentils-pa cup, Dry copra thinly sliced-pa cup, Sesame seeds-1 tsp, Almonds-pa cup, Cashews-pa cup, Raisins-pa cup, Turmeric-half tsp, Red chillies Powder-half a spoon, salt-as per taste, brown sugar-1 spoon, amchoor powder-a spoon, Method: First of all, take the oats in a pan on a medium heat in a griddle plate. Fry the nylon panna in the same way. Now heat oil and ghee in a pan, fry the cumin seeds, groundnuts and pulses. When well roasted sweet neem leaves, green chillies, dry copra pieces and cashew nuts turn off the gas and add sesame seeds, raisins, red chilli powder and salt, roasted oats, pauna, cornflakes and brown sugar. Stir everything well and mix well. Low Oil Roasted Oats Chevda is ready. After it cools down a little, keep it in an airtight container. Fenugreek paste Ingredients: Wheat flour-2 cups, Sesame seeds-1 cup, Chilli flakes-1 teaspoon, Oregano powder-1 teaspoon, Turmeric-pa teaspoon, Red chili powder-1 teaspoon, Kasuri fenugreek-1 teaspoon, Oil-for mouth, Salt as per taste Method : Mix all the above mentioned ingredients in a bowl and make a paratha like dough. After resting for 10 to 15 minutes, spread a large roti, apply oil on it and fold the flour. Cut long strips with scissors. Fry golden in hot oil. Sprinkle some chita masala on top. Then fill it in an air tight container. Butter Spinach Chakri Ingredients: Spinach-1 judi, Rice flour-2 cup, Fenugreek-1 cup, Butter-50 gm, Ginger-chili paste-2 spoon, Sesame-2 spoon, Ajmo-chapati, Asafoetida spoon, Salt : Clean and wash the spinach and boil it in hot water for five minutes. Drain the water and make a paste in a mixer. Sift both the flours, add the rest of the ingredients and spinach paste and make a soft dough. Grease the chakri pan with oil and fill it with flour. Apply oil on a plate and pour all the chakari on it. When the oil is hot, take the chakri with the help of a tong and put it in the oil. Fry on medium heat. It will take around seven to eight minutes for the chakari to be ready.
