Sometimes when we fry anything in oil, it remains raw. There are some important rules of deep frying, which everyone should know. 1. Burner Selection… Use a small burner for deep frying. The temperature can be increased or decreased while heating and frying oil on this. By doing this the gas flame heats the utensil evenly and the frying is done well. 2. Heat, but at a specific temperature… Oil that is too hot or smokes, the food is only cooked on the outside and raw on the inside. However, if the oil is underheated, the food gets saturated with oil. So put a small piece of the thing to be fried in the oil, if it rises immediately, then you know that the oil is hot enough. 3 Change the gas flame… Fry the bhajis or puris etc. in hot oil and on high flame. After turning once, reduce the gas flame to medium and fry it. By doing this, the fritters or puri will be fried properly from inside and will also become crunchy.
