Vegetable Steam Momos
Ingredients : For flour : chickpea flour-1 cup, oil-2 tbsp, salt-as per taste, For stuffing : oil-2 tbsp, ginger, chilli and garlic paste-1 tbsp, finely chopped mix vegetables (cauliflower, carrot, capsicum, Onion)-2 cups, pepper powder-pa spoon, salt-as per taste Serve: Sezwan Chutney and Mayonnaise Method: Sieve the flour in a pot, pour salt oil and water as needed and make a paratha like dough. Heat oil in a pan and saute ginger, chillies and garlic paste. Now add chopped vegetables, pepper powder and salt as required. Cook on fast heat for two minutes, switch off the gas and let the mixture cool down. Fill small portions of flour with this crunchy stuffing and shape them into momos. The momos will take about ten minutes to steam. Serve Tasty Vegetable Steam Momos with Mayonnaise and Sezwan Chutney.
Steam buffer
Ingredients: Gram dal-2 cups, onion-2 nos, garlic clove-10 to 12, green chillies-4 nos, ginger-small piece, turmeric-half spoon, coriander-1 spoon, sesame seeds-1 spoon, hing-pa spoon, Chopped coriander-pa cup, Red chilli powder-half tsp, Salt-as per taste, Lemon juice-1 tsp, Baking soda-pa tsp, Oil-3 tsp, Rye-pa tsp, Cumin-pa tsp, Sweet neem-5 to 6 Recipe: This dish is a common breakfast dish of Chhattisgarh. Soak gram dal in water for five to six hours and crush it in a mixer. Chop the ginger-chilli and onion into large pieces in a small chopper. Mix the rest of the ingredients into the gram dal mixture. Now put oil in a steamer and steam the pudding for ten minutes. Heat oil and pour it after adding rai, cumin, asafoetida, sesame seeds and neem. Sprinkle red chili powder and chopped coriander over the hot baphori and serve with garlic chutney or green chutney.
Steam fists
Ingredients : Cooked rice-1 cup, gram flour-half cup, chopped coriander-half cup, sugar-2 tsp, coriander-2 tsp, turmeric powder-half tsp, salt-as per taste, green chili paste-half tsp, red chillies. Powder-half teaspoon, lemon juice-1 teaspoon Method : Mix all the above mentioned ingredients in a wide vessel. Bend its fists until it can be bent by hand. Spread some oil in a steamer plate and place the folded fists on it. For about half an hour the fists will feel nice. When it gets cold, enjoy cut and boiled muthi with tea. These handfuls are also delicious when sprinkled with raisin, sesame seeds and neem.
Steam yogurt
Ingredients: Yogurt Musco-2 cup, Condensed milk-1 cup, Milk-half cup, Saffron-pinch, cardamom powder-pa spoon, almonds-pistachio cut-for Garnish Method: Steam Yogurt or Bhapa Doi is a Bengali sweet. Mix curd, condensed milk, saffron, milk and cardamom powder well in a bowl. Pour the mixture into separate bowls or small glasses, garnish with almond-pistachio slices, cover with steam and steam for 20 minutes. Once it comes to room temperature, let it set in the fridge for two to three hours.
Potatoes
Ingredients : Mix namkeen (ganthia, phulvadi, bundi chawan etc.), brown sugar-1 tsp, chopped coriander-4 tsp, salt-as needed, oil-half tsp, red chilli powder-1 tsp, small potatoes-8 to 10 pcs. : Crush the namkeen in a mixer and take it in a plate, add sugar, red chilli powder and chopped coriander and mix it. Peel the potato and fill the prepared masala in it. Put the steamer in the cooker and cook for three whistles. Drizzle oil over the delicious varaliya potatoes and enjoy hot.
Steam characters
Ingredients: Betel leaves-10 nos., gram flour-2 cup, wheat flour-half cup, salt-as per taste, green chili paste-2 tsp, chopped coriander-2 tsp, turmeric-half tsp, hing-pa tsp, coriander seeds. -2 spoons, red chilli powder-1 spoon, sugar-2 spoons, tamarind juice-4 spoons, baking soda-1 spoon Method : First of all, wash the leaves well and clean them with a clean cloth. Save and remove all the veins with an edged chappa. After this, add gram flour, wheat flour and remaining spices in a pot and pour water as needed and prepare the pudding. Add baking soda and mix well once again. Apply a thick layer of this mixture on the cleaned leaves. Wrap it tightly round to prepare a roll. Steam it in a hot steamer for about 20 minutes. Mnem can also be eaten by cutting hot steamed dishes. If you want to enjoy a different taste, it can be eaten with rye and sesame seeds as well as green chillies. Serving spicy green chutney with these dishes can add to the fun of the meal.
